I love quiches. I am big fun of using leftovers and creating good food out of things at hand.
I hope you will give this dish a try
Ready made shortcrust pastry or you can prepare your own (I did)
1 small onion
1 pepper (my was quite old)
leftover meat (I used some ham and chicken)
Greek yoghurt or quark
dill or some other leftover herbs
Preheat oven to 180 degrees.
Put shortcrust to quiche tin. Bake blind for 15min
Cut onions and mushrooms. Saute them until soft. Add peppers, meat and herbs. Fry them for few minutes. Season to taste.
I used salt, pepper and oregano.
Add mixture into prepared crust.
Mix 3 eggs with 3 tablespoons of yoghurt. Season to taste. I have added salt, pepper, sweet paprika, oregano, parsley and basil.
Pour egg mixture into crust
Bake 25 min or until golden and eggs are fully set
We had it for supper.
Some is left for tomorrow for lunch.
